Mini Quiches

Here’s a simple recipe for Mini Quiches, perfect for small bites:

Ingredients:

  • Crust:
    • 1 ½ cups all-purpose flour
    • 100g cold butter, diced
    • 1 egg yolk
    • A pinch of salt
    • 2-3 tbsp cold water
  • Filling:
    • 4 eggs
    • 1 cup milk or cream
    • 1 cup shredded cheese (cheddar, gruyere, or your favorite)
    • ½ cup cooked and diced vegetables (spinach, bell peppers, mushrooms, etc.)
    • ½ cup cooked meat (ham, bacon, chicken, optional)
    • Salt and pepper to taste
    • A pinch of nutmeg (optional)

Instructions:

  1. Prepare the Crust:
    • In a bowl, combine the flour and salt. Add cold butter and mix until it forms coarse crumbs.
    • Add egg yolk and cold water. Mix gently until the dough comes together.
    • Roll into a ball, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Prepare the Filling:
    • In a bowl, whisk eggs, milk or cream, salt, pepper, and nutmeg.
    • Stir in the cheese, vegetables, and meat (if using).
  3. Assemble:
    • Preheat oven to 180°C (350°F).
    • Roll out the dough and cut into small circles. Press the dough into mini muffin tins or small tart molds.
    • Pour the egg mixture into each mini crust, filling about ¾ full.
  4. Bake:
    • Bake for 15-20 minutes, until the quiches are set and golden.
    • Let cool slightly before removing from the tin.
