Moist Chocolate Cake Recipe

Ingredients:

  • 1 and 3/4 cups (220g) all-purpose flour
  • 3/4 cup (65g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • 1 and 1/2 tsp baking powder
  • 1 and 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) boiling water
  • 1/2 cup (120ml) hot coffee (optional, enhances chocolate flavor)

For Chocolate Ganache:

  • 1 cup (240ml) heavy cream
  • 200g dark chocolate (chopped)
  • 1 tbsp unsalted butter

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Mix the dry ingredients: In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. Add wet ingredients: Add eggs, milk, oil, and vanilla extract to the dry ingredients. Beat with a mixer on medium speed for about 2 minutes.
  4. Add boiling water and coffee: Stir in the boiling water (and coffee if using). The batter will be thin, but that’s okay! It helps keep the cake moist.
  5. Bake: Pour the batter into the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool: Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, remove them from the pans and let them cool completely on a wire rack.

For the Chocolate Ganache:

  1. Heat the cream: In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer (don’t let it boil).
  2. Pour over chocolate: Pour the hot cream over the chopped dark chocolate in a bowl and let it sit for a minute to melt the chocolate.
  3. Stir in butter: Stir until smooth and glossy, then add in the butter. Let it cool slightly to thicken before pouring over the cake.

Assembling the Cake:

  1. Place one cooled cake layer on a serving plate. Spread a thick layer of ganache over the top.
  2. Place the second cake layer on top and pour the remaining ganache over the entire cake, letting it drip down the sides.
  3. Decorate with chocolate curls or fresh berries, if desired.
