Yogurt Muffins Recipe
Ingredients
- 1 cup (250g) plain yogurt
- 1/2 cup (100g) granulated sugar
- 1/4 cup (60ml) vegetable oil (or melted butter)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 and 1/2 cups (190g) all-purpose flour
- 1 and 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional add-ins: 1/2 cup of blueberries, chocolate chips, or nuts
Instructions
- Preheat the Oven: Preheat your oven to 180°C (350°F). Line a muffin tin with paper liners or grease it lightly.
- Mix Wet Ingredients: In a large bowl, whisk together the yogurt, sugar, vegetable oil, eggs, and vanilla extract until smooth and creamy.
- Combine Dry Ingredients: In another bowl, sift together the flour, baking powder, baking soda, and salt.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet mixture, stirring just until combined. Do not overmix, or the muffins will be dense. If you’re adding extras like blueberries, fold them in gently.
- Fill the Muffin Cups: Divide the batter evenly among the muffin cups, filling each about 3/4 full.
